FLOUR-RICE RECIPES:
Pizza Dough
Ingredients: (about 5 pizza of 30 cm)
500 g Wheaten Flour
300 ml Water
20 g Fresh Yeast
½ tablespoon Salt
½ tablespoon Sugar
1 tablespoon Olive Oil
Preparation:
- Crush yeast with your fingers and pour in a bowl with the flour, salt and sugar. (Sugar acts in combination with the yeast and make the dough more inflatable and fluffy.)
- Add the olive oil, slowly pour water and begin kneading. (Do not add all the water from the beginning, as it depends on the flour quality how much you’ll need).
- Once the ingredients are well combined, gather the dough into a ball and remove from bowl.
- Sprinkle the work surface with flour and roll the dough up. Hold with one hand on one side, open the other by stretching. Push, fold, slap and roll the dough around, over and over. You need persistent pressure by handfuls, ideal for 15-20 minutes,until you have silky and elastic dough.
- Once fluffy enough and become soft and smooth, mold into a ball, and put it in a small bowl (ideal metal or wood, not plastic). Set aside to rise at room temperature ideal for 8 hours, wrapped in a towel.
- After inflation sprinkle with flour the worksurface. Knead for a few minutes and cut the dough into smaller balls of about 170 grams each. Wet a clean towel and cover to prevent dry. Leave aside for 1 hour, until you prepare the ingredients of pizza.
- Roll out the balls on the counter and press with fingers or a heavy rolling pin to stretch out. At this point a little extra flour will help to prevent sticking the dough.
